  • 2 black plantains
  • 3 eggs
  • 3 tbsps coconut oil , melted
  • 3 tbsps raw honey*
  • 1/2 cup melted chocolate (Organic, at least 70% cocoa)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 tsps cinnamon
  • 1/2 tsps sea salt

  1. Firstly, always preheat your oven. Set it to 175C or 350F.
  2. Remove the skin of the plantains by chopping off 1 inch of both ends, slicing through the skin and taking off the skin. This process can be seen in the video below.
  3. Next, chop the plantain into 4-5 pieces and add to your blender. This just helps to process it better.
  4. Add eggs and vanilla extract. Process till smooth.
  5. Melt your coconut oil and chocolate by placing in the microwave for 10-15 secs and stirring the chocolate all the way through.
  6. Next, add chocolate and honey. Process until incorporated.
  7. Add in cinnamon, salt and baking soda. Process for 10seconds, just to incorporate.
  8. Using a 9 inch baking pan, pour in and spread out your mixture.
  9. Bake for 30-35 minutes and do a toothpick test after 30 minutes i.e. stick a toothpick in the centre of the brownie, if you pull it out and it comes out clean, it is done. If not, leave in for a few more minutes
  10. Allow the brownies to cool before actually slicing them up into cute little portions
