Paleo Warm Grilled Pineapple Salsa – delicious caramelized grilled pineapple with tomatoes, onion, pepper and lime juice. Perfect for whenever you need some salsa!

Ingredients

  • ½ large pineapple (sliced, but not cored, yet)
  • 1 tbsp raw honey
  • 1 tbsp coconut or olive oil
  • 1-2 tomatoes (diced)
  • 1 bell pepper (diced)
  • 1 sweet onion (diced)
  • A bunch of coriander leaves (chopped, cilantro)
  • Juice of 1 lime
  • Pinch of salt (I used Pink Himalayan)

Instructions

  1. Place your sliced pineapples in a bag and toss with oil and honey.
  2. Put grill pan on medium-high heat (or grill).
  3. Grill pineapples for 2-3 minutes on each side or until caramelized (try not to scorch! I learned my lesson)
  4. Once all pineapples are done, cut out the core, dice and mix with the rest of your salsa ingredients.
  5. Squeeze in your lime juice, toss and enjoy!
