Ingredients

  • 1 tbsp coconut oil (melted)
  • 2 tbsp coconut flour
  • 1 tbsp tapioca flour
  • 1 tbsp organic cocoa powder
  • 1 tbsp organic blackstrap molasses
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 tbsp unsweetened almond milk (or homemade)
  • 1 tsp vanilla extract
  • 1 egg
  • 1/4 tsp baking powder
  • Pinch of Salt

Instructions

  1. Add your ingredients to your mug in the order of the list* and stir well.
  2. Place in your microwave* for 1 minute 20 seconds.
  3. Let cool for a minute. Serve and enjoy

Recipe Notes

*Adding the ingredients in order should prevent you adding some cold milk to your oil to avoid it hardening
** I have a 700W microwave so adjust timings accordingly
Lastly, your cake may have a molten effect in the middle when done - this is fine, if you leave as is; your cake will still be cooking so allowing it to rest works. You could also just stir this through your cake, I found it helped to keep the cake extremely moist!

The size of this cake means it can actually be shared by 2 people.. (just letting you know lol!)
