1cupof Frozen Mangoes(diced, for easier processing)
1Frozen Banana
1-2tablespoonsof Coconut Milk or Unsweetened Almond Milk
Optional
1teaspoonof Vanilla Extract or 1/4 teaspoon of Ground Vanilla
1teaspoonof Mint Juice
A squeeze of Lime Juice
Coconut Sugar for dusting
Instructions
Take your mangoes and banana out and leave them to thaw for about 15-20 minutes. You really don't want to skip this step. I learned the hard way and I'm now sourcing a replacement blade for my food processor.
Using a food processor or a high speed blender, add in all your ingredients (including any optional). Process on high till fruit has broken down and mixture becomes creamy. Add in the extra tablespoon of milk if needed. You may need to turn it off and either scrape down the sides or give it a little shake before continuing.
Once creamy, serve and enjoy.
Recipe Notes
You don't want to over process this ice-cream as the heat can cause the contents to melt and not give you the texture of ice-cream. This also comes out more like soft-serve ice-cream.
