Paleo Cast Iron Skillet Sweet Potato Pizza - a deep dish / pan pizza with a chewy sweet potato crust with crunchy exterior. Smoky homemade bbq sauce makes the base, then topped with cajun chicken, spinach, jalapenos and olives.

Ingredients
1cuppacked mashed sweet potato(335g/ 0.7lb about 2 medium sized sweet potatoes)
½cuptapioca flour
¼dried oregano
¼tspgarlic powder
2tbspnutritional yeast
3tbspcoconut flour
¼tsppink himalayan salt
¼tspblack pepper
Cajun seasoning(check notes for recipe)
1-2cooked chicken breast
Homemade BBQ sauce(check notes for recipe)

Instructions
Preheat your oven to 175C/350F.
Mix your pizza base ingredients in a mixing bowl.
Transfer to your cast iron skillet* and bake for 25-30mins, till the crust is golden brown**
While you’re baking you're pizza, you can make your bbq sauce if using my recipe.
Once pizza base is done, top with bbq sauce, spinach, Cajun chicken, jalapenos and olives.
*You may need to grease your skillet but if it is well seasoned it should have a fair amount of non-stick to it! **You can also check for doneness by pressing the centre of the pizza, it should bounce back to it’s form. This pizza should actually be enough to serve 2-3 people depending on how you slice it. As it is a deep dish pizza it is quite filling.
