Ingredients

Wet Ingredients

  • 2 tbsp lemon juice
  • 2 tsp pure vanilla extract
  • 3 eggs (whisked)
  • 1/3 cup coconut milk
  • 1/3 cup raw honey
  • 2 tbsp melted coconut oil

Dry Ingredients

  • 1+ 1/2 cups almond flour
  • 3 tbsp coconut flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tbsp lemon zest (1 lemon’s worth)
  • 1 tbsp earl grey tea leaves
  • 1 tbsp poppyseeds

Instructions

  1. Preheat your oven to 175C/350F.
  2. In a mixing bowl, mix together your wet ingredients till fully incorporated.
  3. Next, sieve in your flours. Then, add in the rest of your dry ingredients and mix to fully incorporate.
  4. In a 2lb loaf pan lined with parchment paper, pour in your loaf cake mixture.
  5. Bake for 35-40 mins, until a toothpick inserted in the centre of the cake comes out clean.
  6. Serve with Homemade Earl Grey Paleo Jam and enjoy!
