Vegan Spiralized Courgette Pasta with Creamy Mushroom Turmeric Sauce

You ever eat the same meal over and over again and for some reason, it still tastes just as good as the first time?  I actually can’t get bored of this dish. It is light-tasting but quite filling – plus, it works super well if you’re trying to eat more vegetables (like me, when I finally run out of bacon).

I am such a huge fan of turmeric.  I think it’s such an underrated food but I’m so glad I found out about it – quite oddly…

When I was younger, I unfortunately had a very silly accident that left a dark scar on my leg. I was trying to find out how I could match it to my actual skin tone. Dr.Google said to use a certain paste mixture that included turmeric. It didn’t work (go figure lol) however, I had all this turmeric left!

The Mushroom Turmeric sauce bangs!

In an effort to not waste food, I decided to search for all the ways I could use turmeric. Did you know that turmeric is a pain-relieving boss? Seriously, try it as a tea if you ever feel pain – more specifically, for women – if you ever have cramps. Works just like Ibuprofen I tell ya.

Turmeric and I have been best buds ever since. Hence why this Vegan Spiralized Courgette Pasta with Creamy Mushroom Turmeric Sauce is one of my favourites. The mix of turmeric and coconut milk leaves a sweet, creamy, curry-like sauce – the roasted mushrooms are the cherry on top. You can pan-fry the mushrooms but I totally think they taste mighty fine roasted – no soggy mushrooms in sight!

Vegan Spiralized Zucchini Noodles with Creamy Mushroom Turmeric Sauce

Vegan Spiralized Courgette / Zucchini Pasta with a sweet & creamy roasted mushroom, turmeric and coconut sauce

Ingredients
  • 4 tbsp coconut oil (divided)
  • 5-6 large chestnut mushrooms (chopped)
  • 1 sweet onion (diced)
  • 2 cloves garlic (minced)
  • 1 fennel (chopped)
  • Bunch of cherry tomatoes
  • 250 ml/ 8.5 fl. coconut milk (room temperature)
  • 1 tsp turmeric powder
  • Salt (I use Pink Himalayan)
  • Black Pepper
  • 3 courgettes (spiralized)
Instructions
  1. (Skip step if pan-frying mushrooms) Preheat your oven to 200C/400F. Toss your mushrooms with 2 tablespoons of coconut oil, salt & pepper. Place on a baking sheet and roast for 7-10mins.

  2. Place a saucepan on medium heat. Add a tablespoon of oil, diced onions and garlic. Cook for 2-3mins, till translucent.

  3. Add in fennel and tomatoes and cook for 2 more mins.
  4. Add in your coconut milk and turmeric. Stir until incorporated.
  5. Bring sauce to a rolling boil. Once it reaches a rolling boil, turn down to a low heat and simmer for 10-15 mins*
  6. Once sauce has reached desired thickness, add in your mushrooms, salt & pepper to taste.
  7. In a frying pan, heat a tablespoon of oil. Add in your spiralized courgette and flash fry for 2-3min**

  8. Once done, serve and enjoy!
Recipe Notes

The longer you cook the sauce, the thicker it will become.
**You may choose to add your courgettes directly to your sauce to cook. Cook for 2-3mins and serve

    As soon my kitchen is finished being refurbished this is going to be the first recipe I make. I love the fact that it’s vegan, you know I don’t really eat tons of eat so always on the hunt for a good meatless meal.
