No egg carbonara, say what? You’re not in the slightest bit ready. In 10 mins you can have a delicious hot Paleo meal on the table!
Just like my vegan courgettes recipe – ugh what would I do without courgettes (zucchini) in my life. I legit don’t miss spaghetti/pasta; nothing in me wants to voluntarily consume those things again!
I didn’t make it the traditional carbonara way with the eggs because trust me, this way is quicker, easier and unlikely to cause the amateur cook to sweat over scrambled egg carbonara lol.
A low carb, gluten free and dairy free dish, using coconut milk to form a light, creamy base and nutritional yeast to provide a nice, cheesy flavour – it basically comes together as a delicious white sauce.
Make it with shrimp, chicken and bacon it’s all a dream but this paleo smoked salmon carbonara is my favourite. This dish could also be vegan – just omit the salmon, I guess.
The reason why this dish is super easy is because there is no chopping involved! Apart from tearing up the smoked salmon, you don’t have to break out a knife and chopping board. However, if you would like to make this with fresh onions and garlic, by all means go ahead!
This meal is made in one pot, no need to do anything to the courgettes beforehand. Just mix it in the sauce and you are good to go! Courgettes like to sweat and release water so I’d rather you just mix it with the sauce for a minute and serve!
Give this paleo smoked salmon courgette carbonara a try – it’s a 10 minute meal that you literally do not have to think about: it’s a throw it all in and dump it all out kind of dish. Probably doesn’t sound as appealing as it should but I’m pretty sure these courgette recipes will become a regular thing in your household!
Paleo Smoked Salmon Carbonara - smoked salmon, cherry tomatoes and courgettes (zucchini) tossed in a light, creamy white sauce plus no eggs involved!
- ½ cup coconut milk
- 1 tbsp nutritional yeast
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp pink himalayan salt
- ¼ tsp black pepper
- 120 g smoked salmon (torn apart into little pieces, 0.26lb)
- 3-4 cherry tomatoes (sliced halves, can be more)
- 2 courgettes (spiralized)
- Bring coconut milk to boil in a medium sized saucepan.
- Add seasonings and turn down the heat to simmer for 5mins.
- Add in salmon, tomatoes and courgettes.
- Toss with tongs to mix.
- Serve immediately and enjoy!
Courgettes (zucchini) are known to let out a lot of water. I personally don’t mind this, the sauce is still delicious but just not as thick
