Orange BBQ Pulled Pork Cabbage Wraps – make great use of pulled pork leftovers with this easy, healthy and quick meal!

I have so much pulled pork left. Like it’s drowning in my freezer. I feel like I stored food from a big banquet or something. I guess it’s one of the many perks of cooking for one (two, if I can get my sister to eat something besides potato waffles & chicken lol)

I found out about the whole lettuce/cabbage wrap thing on Pinterest (btw, come check me out on there, I’m on a pinning craze) and I totally figured that my pork would be a match made in heaven. Plus, Tesco was doing a huge sale on organic items, so I bought a bunch of seasonal cabbage.
One thing to mention: if you’re using cabbage and you find that; you don’t want to eat it raw, it’s too bitter or it’s too hard to handle, go ahead and steam it lightly for a few minutes. It’ll be just right for you.
Easy lunch idea. Check. Fast prep. Check. Using up all that juicy pork. Check.
I’m not even done, I have another pulled pork recipe on the way because it tastes so damn good!!!


- Orange BBQ Pulled Pork leftovers (recipe in notes)
- 1 Avocado (diced)
- 1 Bell Pepper (diced)
- 2 carrots (sliced into ribbons)
- As many cabbage/lettuce leaves as desired
- Simply wrap fillings in cabbage leaves and enjoy!
Remember, you can also steam the cabbage for about 3-5mins, place in an ice cold bath and use.
