Pistachio Mint Ice Cream Smoothie
I really am in love with pistachios. I don’t eat them much because I don’t eat a lot of nuts but when I do, pistachios are my favourites. I was always so in love Pistachio ice cream and Mint ice cream – thinking that these two are somewhat synonymous, I decided to make this Pistachio Mint Ice Cream Smoothie.
I’m so into ice cream smoothies, I call them “Ice Cream” because they’re a frozen treat and “Smoothies” because of the way they’re actually prepared lol.
Let me tell you, this recipe crosses the breakfast and treat borders. You could totally make this into a *greener* smoothie by adding some spinach or kale. Or, if you follow my advice in my Paleo Neapolitan Ice Cream Smoothie, this could be an indulgent dessert.
Don’t forget the chocolate shavings (unless you’re going dairy-free): they are everything! Make sure you source organic chocolate with at least 70% cacao and no soya!
Pistachio Mint Ice Cream Smoothie
So, I’m in dire need of a whole 30. You know when life happens and you let yourself go to try to deal? Well, life happened lol. In an effort to pull myself together, I’m going straight into April with a whole 30.
Now, I know it’s the 3rd of April but am I the only one that doesn’t like starting projects like this on the first day of the month?

Delicious topped with chocolate shavings (if not dairy free)
- 1/4 cup pistachio nuts
- leaves Handful of mint
- 2 frozen bananas
- 1/4 cup of coconut or unsweetened almond milk
- Organic dark chocolate shavings
- Chopped pistachio nuts

Using a high powered blender or food processor, process all your ingredients until creamy and smooth.

Serve topped with the chocolate shavings and chopped nuts.
For more of an ice cream texture: add your milk in a tablespoon at a time, just enough to allow your machine to process effectively. This depends on the machine you use.

May, 2016 at 5:06 PMThis sounds really yummy and refreshing, especially with the fresh mint! I’ve been snacking on organic habanero and onion & garlic pistachios the past few months, but I don’t think those would work here, LOL. Or maybe the sweet & spicy would taste great. Hmmm…

May, 2016 at 2:45 PMI make smoothies for breakfast every day, but would you believe I’ve never added in pistachios? I use walnuts, pecans, or peanuts, but now I have to get hold of some pistachios! What a gorgeous color, and the nuts must lend such great flavor.

Anyway, I love pistachio nuts, I normally just nibble on them throughout the day. I’ve never thought about making a smoothie with them, just need some mint leaves to try this one.
