One Pot Tuna Breakfast Bake – a delicious, make-ahead meal for your lazy mornings. Completely paleo, gluten free and dairy free recipe.

One Pot Tuna Breakfast Bake - gluten free and dairy free egg bake that makes a delicious make-ahead breakfast!

I LOVE this recipe. I probably don’t even say it that often about my recipes – even though I love them all. However, I absolutely adore this One Pot Tuna Breakfast Bake. It’s super easy and has honestly made breakfast a win for me! Seriously, breakfast doesn’t get any easier; I mean, once you’ve made the recipe and you have leftovers for the week – you’ll thank me!

Tuna is probably one of the fish that I don’t eat a lot unless I specifically intend on making it the star of a dish e.g. my Cajun Tuna Fishcakes. Yes, tuna is high in mercury so it is best to choose chunk light, skipjack tuna. I tend to rotate my seafood anyhow, making sure to enjoy all types of fish but just being aware of what types of fish are safer to eat (farmed is a big NO). I also read that it is good to enjoy the little fish like the sardines and anchovies too!

For this recipe, all you need is one pot that is direct heat and oven safe like my favourite Terracotta dish. If you’re making this for more than 2 people, I would suggest making 2-3 batches if you’re intending on eating it for the rest of the week.
