Paleo Chicken Zucchini Noodle Slow Cooker Soup – this delicious paleo chicken noodle soup makes me all fuzzy inside! The perfect thing for a cold and to warm you up this winter!
Here’s a new thing for you guys! Today, I don’t have my own recipe for you but a review of a recipe from another talented blogger! I renamed the recipe a Paleo Chicken Zucchini Noodle Slow Cooker Soup – I know, it’s a ridiculous mouthful but I think I got my point across, right?
This delicious chicken noodle soup with zucchini is from Sarah Jane at EverydaySarahJane.com! There are so many delicious recipes on her site (you seriously must check it out!) but I settled on this delicious soup to review! I came down with the most ridiculous cough that couldn’t decide whether it wanted to be dry and tickly or wet and disgusting – basically, this soup is helping me clear it right up!
Sarah’s humble but nutritious chicken soup is wholly made in the slow cooker! This is probably the best point to the recipe because let’s face it, we all want soup but no one wants to stress over making soup! I just want to dump everything in, set and forget it! The thing about the slow cooker is it allows the flavours of the soup to really draw out and still keeps the nutrients together.
Here’s a lovely tip: add some grass fed gelatin to your soups! Especially when, like me, you don’t have actual bone broth to hand. Bone broth is said to contain some immune boosting, gut healing properties which I believe is due to the gelatin and other nutrients that is extracted from the bones while slow cooking. It makes a wonderful base for soups and stews and would have made the perfect base for Sarah’s chicken zoodle soup recipe!
I ended up making 3-4 batches of this soup by just adding a bit more chicken stock and water, plus I added a sweet kick of cayenne and ginger to really get the cold-busting effects!

- 1 L / 40 oz. chicken stock (can use any bone broth or chicken broth)
- 236 ml / 1 cup water
- 3-4 chicken breasts (depending on what can fit at the bottom of your slow cooker)
- 3 large carrots (diced)
- 3 large celery stalks (diced)
- 1 yellow onion (diced)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1 tsp pink himalayan salt
- 1/2 tsp cayenne pepper
- 1/2 tsp white pepper
- 1-2 courgettes spiralized (zucchini)
- 1 tbsp grass fed gelatin (optional)
